Corn Ribs:
- 3 corn cobs
Mexican Seasoning Mix:
- 3 tablespoons salted butter, at room temperature
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano leaves
- 1/2 teaspoon onion powder
Instructions
- Cook the Corn: Place corn cobs in a large microwave-safe dish, cover with a damp paper towel, and microwave on High for 5 minutes.
- Prepare Mexican Seasoning: Mix butter and Mexican seasoning in a bowl.
- Coat Corn Ribs: Brush corn ribs with the butter mixture.
- Cut Corn: Cut the corncobs lengthwise down the center, then halve them again to create 4 long ‘ribs’.
- Air Fry: Place corn ribs in the air fryer basket and air fry at 375°F for 12-15 minutes until charred and crispy.
- Serve: Arrange corn ribs on a plate, drizzle with sauce, and sprinkle with cilantro. Serve with lime wedges.
