  • 3 corn cobs

Mexican Seasoning Mix:

  • 3 tablespoons salted butter, at room temperature
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon onion powder

Instructions

  1. Cook the Corn: Place corn cobs in a large microwave-safe dish, cover with a damp paper towel, and microwave on High for 5 minutes.
  2. Prepare Mexican Seasoning: Mix butter and Mexican seasoning in a bowl.
  3. Coat Corn Ribs: Brush corn ribs with the butter mixture.
  4. Cut Corn: Cut the corncobs lengthwise down the center, then halve them again to create 4 long ‘ribs’.
