Description

Apple Samoas are a delightful and healthy twist on the classic cookie, combining fresh apple slices topped with a creamy coconut and nut butter mixture, drizzled with rich chocolate. This easy no-bake snack is perfect for a quick treat or a nutritious dessert, offering a satisfying blend of flavors and textures.

Ingredients

Scale

Apples

  • 1 apple, Honeycrisp preferred, or Pink Lady

Toppings

  • ⅓ cup unsweetened shredded coconut
  • 3 tablespoons almond butter or cashew butter, or seed butter of choice
  • ½ tablespoon maple syrup
  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil

Instructions

  1. Prepare apples: Cut the apple into ¼-inch thick slices and core them. Aim to get 3-4 slices for the snack.
  2. Make topping mixture: In a bowl, mix together the shredded coconut, almond butter, and maple syrup until fully combined and smooth.
  3. Assemble apple slices: Spread the coconut and nut butter mixture on top of each apple slice evenly, then place the assembled slices on parchment paper to prepare for chocolate drizzle.
  4. Melt chocolate: Gently melt the chocolate chips with the coconut oil, either using a microwave in short bursts or a double boiler, stirring frequently to ensure smooth melting.
  5. Drizzle and chill: Drizzle the melted chocolate over each apple slice generously. Place the tray of apple slices in the freezer for about 5-10 minutes until the chocolate sets firm.
  6. Serve and enjoy: Once firm, enjoy your Apple Samoas immediately or store accordingly.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. Note that apples might lose some crunch but remain tasty.
  • Freezing: Freeze assembled apple slices on a baking sheet first, then transfer to a freezer-safe bag. Store for up to 1 month. Allow to thaw for a few minutes before eating.
