Ingredients
Scale
Apples
- 1 apple, Honeycrisp preferred, or Pink Lady
Toppings
- ⅓ cup unsweetened shredded coconut
- 3 tablespoons almond butter or cashew butter, or seed butter of choice
- ½ tablespoon maple syrup
- 2 tablespoons chocolate chips
- ½ teaspoon coconut oil
Instructions
- Prepare apples: Cut the apple into ¼-inch thick slices and core them. Aim to get 3-4 slices for the snack.
- Make topping mixture: In a bowl, mix together the shredded coconut, almond butter, and maple syrup until fully combined and smooth.
- Assemble apple slices: Spread the coconut and nut butter mixture on top of each apple slice evenly, then place the assembled slices on parchment paper to prepare for chocolate drizzle.
- Melt chocolate: Gently melt the chocolate chips with the coconut oil, either using a microwave in short bursts or a double boiler, stirring frequently to ensure smooth melting.
- Drizzle and chill: Drizzle the melted chocolate over each apple slice generously. Place the tray of apple slices in the freezer for about 5-10 minutes until the chocolate sets firm.
- Serve and enjoy: Once firm, enjoy your Apple Samoas immediately or store accordingly.
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for 2-3 days. Note that apples might lose some crunch but remain tasty.
- Freezing: Freeze assembled apple slices on a baking sheet first, then transfer to a freezer-safe bag. Store for up to 1 month. Allow to thaw for a few minutes before eating.
