These Better than CRUMBL Cosmic Brownie Cookies are a delightful twist on the classic Cosmic Brownies, with a rich chocolate flavor and topped with a decadent chocolate ganache and colorful rainbow chocolate candies.

Dry Ingredients:
- 1 cup + 2 tablespoons all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- Pinch of salt
Wet Ingredients:
- 1 stick butter
- 8 oz good quality semi-sweet chocolate chips
- 2 large eggs, at room temperature
- 2/3 cup brown sugar
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
For the Chocolate Ganache:
- 6 oz good quality semi-sweet chocolate chips
- 1/4 cup heavy cream
- Rainbow chocolate candies, for topping
Instructions
- Preheat the Oven: Preheat the oven to 350F and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a small bowl, combine the flour, cocoa powder, baking powder, and salt. Set aside.
- Melt Butter and Chocolate: In a saucepan, melt the butter and chocolate chips until smooth. Set aside.
- Beat Eggs and Sugars: In a mixing bowl, beat eggs, vanilla, and sugars until light and fluffy.
- Combine Mixtures: Fold the chocolate mixture into the egg mixture, then gently fold in the dry ingredients.
- Bake Cookies: Scoop dough onto the baking sheet and bake for 12 minutes.
- Shape Cookies: Use a cookie cutter to shape the cookies while warm.
- Make Ganache: Microwave chocolate and cream in intervals until smooth.
- Top Cookies: Drizzle ganache over cookies, sprinkle with rainbow candies, and enjoy!
