  • 5 oz baby spinach salad, washed and stems removed
  • 1/2 pint blueberries, washed
  • 1 medium green apple, thinly sliced or diced
  • 1/4 cup feta cheese crumbles
  • 2.25 oz slivered almonds

Orange Poppy Seed Dressing

  • 1/3 cup mayonnaise
  • 1/4 cup orange juice
  • 2 teaspoons white wine vinegar
  • 2 teaspoons poppy seeds
  • 1 teaspoon lemon juice
  • 1 teaspoon sugar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/8 teaspoon garlic powder

Instructions

  1. Prepare the Salad: In a large bowl, combine the baby spinach, washed blueberries, and thinly sliced or diced green apple. Toss gently to mix the ingredients evenly.
  2. Add Toppings: Sprinkle the feta cheese crumbles and slivered almonds evenly over the top of the spinach mixture to add creaminess and crunch.
  3. Make the Dressing: In a small bowl or measuring cup, whisk together the mayonnaise, orange juice, white wine vinegar, poppy seeds, lemon juice, sugar, ground ginger, salt, ground white pepper, and garlic powder until well combined and smooth.
