Description

A refreshing and visually stunning Butterfly Pea Flower Tea Lemonade that combines the earthy floral notes of butterfly pea flowers, mint, and rosemary with zesty lemonade, creating a magical color-changing drink.

FOR SIMPLE SYRUP

  • 1 cup boiling water
  • 1 tbsp dried butterfly pea flowers
  • 1 sprig fresh mint
  • 1 sprig fresh rosemary
  • 1 cup sugar

FOR FRESH LEMONADE

  • 1 large lemon juiced (approx. 1/4 cup)
  • 1 cup cold water
  • lemon slices
  • ice
  • more mint & rosemary for garnish (optional)

Instructions

  1. TO MAKE SIMPLE SYRUP Steep the dried butterfly pea flowers, fresh mint, and fresh rosemary in boiling water for 5 minutes. Remove the flowers and herbs, then stir in sugar until dissolved. Cool completely before using for lemonade.
  2. TO MAKE FRESH LEMONADE Mix freshly squeezed lemon juice and cold water.
  3. TO ASSEMBLE Fill a glass with ice. Pour the herb-infused butterfly pea flower simple syrup into the glass, filling just under halfway. Add lemon slices, then slowly pour fresh lemonade over to mix colors. Garnish and enjoy!

Notes

  • You can prepare the simple syrup a day ahead and refrigerate for quick lemonade assembly.
  • For best flavor, stir the drink before enjoying to evenly distribute sweetness and color.
