Potatoes:
- 3 garlic cloves, minced
- 1/4 cup extra-virgin olive oil
- 4 medium potatoes, Russet or Yukon Gold
Cheese:
- Thick sliced sharp cheddar cheese, as needed
- Kosher salt and freshly ground black pepper, to season
Instructions
- Preheat oven: Preheat oven to 450°F.
- Marinate garlic: Mix minced garlic with olive oil and set aside to marinade.
- Prepare potatoes: Wash, scrub, and pat dry the potatoes. Slice crosswise at ¼-inch intervals, not cutting all the way through, using chopsticks as a guide.
- Season potatoes: Drizzle oil on each potato, rub into skin, stuff with garlic, add cheese between slices, and season generously with salt and pepper.
- Bake: Bake for 40-45 minutes until crisp outside. Baste halfway through and add more cheese if desired.
- Serve: Garnish with butter, sour cream, extra cheese, or bacon crumbles. Enjoy warm!
