Description

Potatoes:

  • 3 garlic cloves, minced
  • 1/4 cup extra-virgin olive oil
  • 4 medium potatoes, Russet or Yukon Gold

Cheese:

  • Thick sliced sharp cheddar cheese, as needed
  • Kosher salt and freshly ground black pepper, to season

Instructions

  1. Preheat oven: Preheat oven to 450°F.
  2. Marinate garlic: Mix minced garlic with olive oil and set aside to marinade.
  3. Prepare potatoes: Wash, scrub, and pat dry the potatoes. Slice crosswise at ¼-inch intervals, not cutting all the way through, using chopsticks as a guide.
  4. Season potatoes: Drizzle oil on each potato, rub into skin, stuff with garlic, add cheese between slices, and season generously with salt and pepper.
  5. Bake: Bake for 40-45 minutes until crisp outside. Baste halfway through and add more cheese if desired.
