Chicken

  • 2 chicken breasts, cut into cubes
  • 1 tbsp dry ranch seasoning
  • 1/2 tsp salt
  • 1/2 tsp pepper

  • 6 strips of bacon, chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare Potatoes: Wash and cube 4 medium/large potatoes. In a bowl, toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
  2. Air Fry Potatoes: Place the seasoned potatoes in the air fryer basket. Cook at 400°F (204°C) for 20-25 minutes, shaking the basket a couple of times during cooking to ensure even crispness.
  3. Cook Bacon: While potatoes cook, chop 6 strips of bacon. Heat a skillet over medium-high heat. Add the bacon and cook until crispy. Remove bacon from the pan, leaving 2 tablespoons of bacon grease in the skillet.
  4. Cook Chicken: Cut the 2 chicken breasts into cubes. Add the chicken to the hot skillet with the reserved bacon grease. Season with 1/2 tsp salt, 1/2 tsp pepper, 1 tsp paprika, and 1 tbsp dry ranch seasoning. Cook until the chicken is fully cooked through, about 5-7 minutes, stirring occasionally. Remove the skillet from heat once done.
  5. Combine Ingredients: When potatoes finish cooking, add them to the skillet with the chicken. Stir to combine all ingredients evenly.
