Instructions
- Prepare Potatoes: Wash and cube 4 medium/large potatoes. In a bowl, toss the potato cubes with olive oil, salt, pepper, garlic powder, and paprika until evenly coated.
- Air Fry Potatoes: Place the seasoned potatoes in the air fryer basket. Cook at 400°F (204°C) for 20-25 minutes, shaking the basket a couple of times during cooking to ensure even crispness.
- Cook Bacon: While potatoes cook, chop 6 strips of bacon. Heat a skillet over medium-high heat. Add the bacon and cook until crispy. Remove bacon from the pan, leaving 2 tablespoons of bacon grease in the skillet.
- Cook Chicken: Cut the 2 chicken breasts into cubes. Add the chicken to the hot skillet with the reserved bacon grease. Season with 1/2 tsp salt, 1/2 tsp pepper, 1 tsp paprika, and 1 tbsp dry ranch seasoning. Cook until the chicken is fully cooked through, about 5-7 minutes, stirring occasionally. Remove the skillet from heat once done.
- Combine Ingredients: When potatoes finish cooking, add them to the skillet with the chicken. Stir to combine all ingredients evenly.
- Add Cheese and Bacon: Sprinkle 1 cup of shredded mozzarella cheese evenly over the potato and chicken mixture. Top with the cooked chopped bacon.
