- 1/2 teaspoon baking soda
- 1/4 teaspoon salt (omit if peanut butter is salted)
- 1/2 cup chocolate chips
Instructions
- Preheat Oven: Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper to prevent sticking.
- Mix Wet Ingredients: In a mixing bowl, whisk together the eggs, peanut butter, sugar, and vanilla extract until the mixture is smooth and well combined.
- Add Dry Ingredients: Fold in the vanilla protein powder, baking soda, and salt carefully. The batter will become quite thick at this point.
- Incorporate Chocolate Chips: Gently fold in the chocolate chips to evenly distribute throughout the dough.
- Form Cookies: Using a 2-tablespoon scoop, portion out the dough and roll each scoop into a ball. Place them on the baking sheet and flatten slightly, shaping them into the desired cookie shape since they won’t spread much while baking.
- Bake: Bake the cookies in the preheated oven for 8-12 minutes, aiming for about 10 minutes for a balanced texture. They will firm up more as they cool.
- Cool and Serve: Let the cookies cool on the baking sheet for 20 minutes before enjoying to allow them to set perfectly.

- Vanilla pea protein was used, but any protein powder such as whey should work well.
