Ingredients
Scale
Main Ingredients
- 1 1/2 cups chopped strawberries
- 1 cup plain Greek yogurt
- 1 tbsp honey
- 1 tsp vanilla extract
Chocolate Coating
- 1 cup semi-sweet chocolate chips
- 2 tbsp coconut oil
Instructions
- Mix Yogurt and Strawberries: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Stir thoroughly until all ingredients are evenly incorporated.
- Form Clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place it onto a parchment paper-lined baking sheet or large plate, shaping it into clusters. You should be able to form approximately 10 clusters.
- Freeze Clusters: Place the baking sheet with the formed yogurt clusters into the freezer and allow them to freeze until completely solid, which will take about 1 to 2 hours.
- Melt Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15- to 30-second intervals, stirring well between each, until the chocolate is fully melted and smooth.
- Coat Clusters in Chocolate: Remove the frozen yogurt clusters from the freezer. Using a spoon, gently dip each cluster into the melted chocolate to thoroughly coat them. Once coated, place the clusters back on the parchment paper-lined baking sheet. Optionally, sprinkle a pinch of sea salt over each cluster.
- Final Freeze: Return the coated clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to firm up slightly. Serve immediately once firm and enjoy your delicious clusters!
Notes
- Make sure the yogurt mixture clusters are fully frozen before dipping into the chocolate to prevent melting.
- Use parchment paper to prevent the clusters from sticking to the tray.
- Use a spoon to coat the clusters evenly with chocolate without damaging their shape.
- Adding a sprinkle of sea salt enhances the flavor by balancing the sweetness.
- Store leftover clusters in the freezer in an airtight container for up to one week.
