  • 1 cup Fine Granulated Sugar (caster sugar preferred)

  • 3/4 cup Cake Flour, sifted
  • Optional for Chocolate Cloud Cake: 1/4 cup unsweetened cocoa powder, sifted with flour, or 2 oz melted and cooled dark chocolate folded in at the end

Instructions

  1. Preheat & Prepare Pan: Preheat oven to 325°F (165°C). Use an ungreased 9 or 10-inch tube pan (Angel food cake pan). Do NOT grease the pan.
  2. Whip Egg Whites: In a very clean, dry, large mixing bowl, beat the egg whites and cream of tartar with an electric mixer until foamy.
  3. Add Sugar Gradually: Gradually add the granulated sugar, beating well after each addition until stiff, glossy peaks form.
  4. Add Vanilla: Gently beat in the vanilla extract.
  5. Fold in Flour: Sift the cake flour over the egg white mixture and gently fold it in with a spatula until just combined.
  6. Fill Pan: Pour the batter into the ungreased tube pan, spreading it evenly.
  7. Bake: Bake for 40-45 minutes until golden brown and springs back when touched.
  8. Cool Upside Down: Invert the pan and let the cake cool upside down to prevent collapsing.
  9. Release Cake: Loosen the cake from the pan and invert it onto a plate.
  10. Serve: Enjoy plain or with your favorite toppings.
