- 1/2 cup sour cream
- 2 tablespoons prepared horseradish
- 1 cup finely shredded sharp cheddar cheese
- 2 scallions, chopped
- 6 slices bacon, cooked and chopped
- About 1/2 cup Everything But the Bagel seasoning blend
For Serving
- Bagel chips and/or crackers
Optional for Decoration
- Real or faux pumpkin stem
Instructions
- Mix Ingredients: In a bowl, combine the softened cream cheese, sour cream, prepared horseradish, finely shredded sharp cheddar cheese, chopped scallions, and cooked chopped bacon. Mix thoroughly until all ingredients are evenly incorporated.
- Shape the Cheeseball: Form the mixture into a ball shape using your hands. Wrap the cheeseball tightly with plastic wrap to help it hold its form.
- Chill: Place the wrapped cheeseball in the refrigerator and chill for at least one hour to allow it to set and flavors to meld.
- Coat with Seasoning: After chilling, unwrap the cheeseball and roll it evenly in the Everything But the Bagel seasoning blend until fully coated on all sides.
- Optional Decoration: To make the cheeseball resemble a pumpkin, place a real or faux pumpkin stem at the top. Use the tip of a chopstick or the back of a butter knife to create grooves along the surface to mimic pumpkin ridges.
- Serve: Arrange the cheeseball on a serving plate and serve with bagel chips and crackers for dipping and spreading.
Notes
- You can make your own Everything But the Bagel seasoning blend by mixing equal parts dehydrated onion flakes, poppy seeds, sesame seeds, and garlic flakes. Add kosher salt and black pepper to taste for a personalized seasoning.
- For best flavor, allow the cheeseball to chill overnight if possible before serving.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
