Strawberry Puree

  • ½ cup granulated sugar

Mousse

  • 1 cup heavy cream (whole, heavy, or whipping cream with at least 30% fat content), cold

Instructions

  1. Prepare Strawberry Puree: Clean and slice the strawberries thoroughly. Place the sliced strawberries and granulated sugar into a blender or food processor and puree until smooth. Remove ½ cup of this puree and set aside for layering.
  2. Whip the Cream: In a cold bowl, beat the cold heavy cream until stiff peaks form. This creates the light and airy texture essential for the mousse.
  3. Combine Puree and Cream: Gently fold the remaining strawberry puree (not the reserved ½ cup) into the whipped cream, being careful to maintain the fluffiness of the mixture.
  4. Assemble the Mousse: Divide the reserved ½ cup of strawberry puree evenly between 4 small to medium glasses (each holds about 1 cup). Spoon or pipe the strawberry mousse mixture over the puree layer in each glass.
  5. Chill: Refrigerate the assembled mousses for approximately 1 hour, or longer if desired, to allow the flavors to meld and the mousse to set.
  6. Garnish and Serve: Before serving, top each mousse with fresh sliced strawberries for added texture and visual appeal. Enjoy immediately.

Notes

  • If using this mousse as a pie or cake filling, whip the cream until thickened, then stir in the strawberry puree.
  • To stabilize the filling, gently dissolve 1 tablespoon of gelatin in 2 tablespoons of milk over low heat without boiling, then temper the gelatin mixture with 1–2 tablespoons of the whipped cream mixture.
  • Fold the gelatin mixture back into the whipped cream mixture to help it set firmly.
