Description

Delicious and healthy frozen banana snacks coated with peanut butter, rich dark chocolate, and a sprinkle of shredded coconut. Perfect as a refreshing treat or a quick energy boost, these easy-to-make snacks combine creamy textures and crunchy toppings for a satisfying bite.

Ingredients

Scale

Fruits

  • 3 bananas

Chocolate Coating

  • 3 dark chocolate squares (1 oz total)
  • 3/4 tsp coconut oil

Toppings

  • 4 tbsp crunchy peanut butter
  • 2 tbsp shredded coconut

Instructions

  1. Prepare Tray: Line a small tray or a plate with baking paper to prevent sticking and make it easy to transfer the frozen snacks.
  2. Slice Bananas: Peel the bananas, cut each banana in half, then slice each half lengthwise, yielding 4 pieces per banana in total.
  3. Melt Chocolate: In a small bowl, break the dark chocolate squares and add the coconut oil. Microwave in short bursts, stirring until the mixture is fully melted and smooth.
  4. Spread Peanut Butter: Spread approximately 1 teaspoon of crunchy peanut butter evenly over each banana slice.
  5. Drizzle Chocolate: Pour the melted chocolate over each peanut butter-coated banana slice for a rich coating.
  6. Add Coconut Topping: Sprinkle about ½ teaspoon of shredded coconut on each slice for an added crunchy texture.
  7. Freeze: Place all coated banana slices on the prepared tray and freeze for 1 to 2 hours until fully frozen.
  8. Store & Serve: Once frozen, transfer the banana snacks into airtight food containers and keep in the freezer. Allow to defrost for a couple of minutes before serving to enjoy a perfectly chilled, creamy treat.

Notes

  • Use ripe but firm bananas to prevent mushiness.
  • Adjust peanut butter amount based on preference for creaminess or crunch.
  • Dark chocolate can be substituted with milk chocolate if preferred.
  • Shredded coconut can be toasted beforehand for enhanced flavor.
  • Keep the snacks stored in a sealed container to avoid freezer odors.
