For the Garlic Butter Mussels:
- 2 Tbsp. butter
- 1 shallot, finely diced
- 2 cloves garlic, minced
- 1/2 tsp. red pepper flakes
- 1/2 cup white wine
- 1 lb. mussels
- Juice of 1 lemon
- Chopped parsley, to top
Instructions
- Clean the mussels: Put the mussels in water and scrub the outsides to clean them.
- Prepare the garlic butter: In a large skillet, melt butter over medium heat. Add shallot and cook until aromatic. Stir in garlic and red pepper flakes, cooking for an additional few minutes.
- Cook the mussels: Pour white wine into the skillet and bring to a simmer. Add mussels, cover, and cook for 5-7 minutes until they open. Discard any unopened mussels.
- Finish the dish: Squeeze lemon juice over the mussels, stir gently, and simmer for another minute. Top with chopped parsley.
- Serve: Serve the mussels with cooking liquid and crusty bread.
