For the Garlic Butter Mussels:

  • 2 Tbsp. butter
  • 1 shallot, finely diced
  • 2 cloves garlic, minced
  • 1/2 tsp. red pepper flakes
  • 1/2 cup white wine
  • 1 lb. mussels
  • Juice of 1 lemon
  • Chopped parsley, to top

Instructions

  1. Clean the mussels: Put the mussels in water and scrub the outsides to clean them.
  2. Prepare the garlic butter: In a large skillet, melt butter over medium heat. Add shallot and cook until aromatic. Stir in garlic and red pepper flakes, cooking for an additional few minutes.
  3. Cook the mussels: Pour white wine into the skillet and bring to a simmer. Add mussels, cover, and cook for 5-7 minutes until they open. Discard any unopened mussels.
  4. Finish the dish: Squeeze lemon juice over the mussels, stir gently, and simmer for another minute. Top with chopped parsley.
