Ingredients
Scale
For the Lamb Chops:
- 8 lamb chops, each approx. 1-inch thick
- Salt and pepper, to season
- ¼ cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, minced
- 1 tablespoon fresh rosemary, minced
- 1 tablespoon olive oil, for cooking
- 2 tablespoons butter, for cooking
Instructions
- Season: Generously season both sides of your lamb chops with salt and pepper to enhance the natural flavors of the meat.
- Prepare the garlic herb marinade: In a small bowl, mix together the olive oil with minced garlic, parsley, and rosemary. Use a pastry brush to apply the marinade evenly on both sides of the lamb chops. Discard any leftover marinade and allow the chops to marinate at room temperature for 30 minutes to absorb the flavors.
- Cook: Heat a large cast-iron skillet or frying pan over medium-high heat. Add 1 tablespoon of olive oil and swirl to coat the pan. When the oil just starts to smoke, place the lamb chops into the skillet. Cook for 3 to 4 minutes until the chops are lightly browned. Add 2 tablespoons of butter to the skillet, flip each chop, and continue cooking for an additional 4 to 5 minutes, or until the internal temperature reaches 125°F for medium-rare or 135°F for medium using a digital meat thermometer.
- Rest: Remove the lamb chops from the skillet and let them rest for at least 5 minutes to allow the juices to redistribute, ensuring maximum tenderness.
- Serve: Serve the lamb chops with homemade mint chutney or your favorite dipping sauce. Enjoy this flavorful and juicy dish!
Notes
- If marinating for longer than 30 minutes, cover the lamb chops and refrigerate. Allow them to come back to room temperature before cooking to ensure even cooking.
- The lamb can be marinated for up to 24 hours for more intense flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
