  • 1/4 cup finishing sugar (or substitute regular sugar if unavailable)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and coat an 11×7 inch baking pan with cooking spray to prevent sticking.
  2. Prepare Batter: In a mixing bowl, combine the flour, sugar, baking powder, salt, and milk. Whisk gently until smooth. Then add the melted butter and vanilla extract, continuing to whisk until fully incorporated into a smooth batter.
  3. Arrange Peaches: Scatter the peeled and sliced peaches evenly on the bottom of the prepared pan. If using fresh peaches, ensure they are peeled using the boiling water method described in the notes.
  4. Add Batter and Topping: Pour the batter evenly over the peaches. Sprinkle the ground cinnamon and finishing sugar evenly on top to create a sweet, crunchy crust.
  5. Bake: Place the pan in the preheated oven and bake for 45 minutes, or until the cobbler is golden brown and the batter is set.
  6. Serve: Serve the peach cobbler warm, ideally with a scoop of vanilla ice cream or a dollop of whipped cream for the perfect dessert experience.

Notes

  • For fresh peaches, to easily peel them: make a small “+” cut on the bottom of each peach, immerse in boiling water for 30 seconds, then transfer to an ice water bath. This loosens the skin making peeling effortless.
  • Finishing sugar is a large crystalized sugar used as a crunchy topping for baked goods but can be substituted with regular sugar if necessary.
  • You can use thawed frozen peaches or drained canned peaches as alternatives year-round.
