Description

This Grilled BBQ Chicken recipe features tender, flavorful chicken thighs marinated in a sweet and smoky barbecue sauce, then grilled to perfection. The marinade combines tomato paste, brown sugar, balsamic vinegar, and spices for a rich, caramelized glaze that pairs beautifully with the smoky char from grilling. Perfect for summer cookouts or any time you’re craving savory, juicy chicken with a hint of sweetness and smokiness.

Ingredients

Units Scale

Marinade Ingredients

  • 2 lb skinless boneless chicken thighs
  • 1/4 cup tomato paste
  • 1/4 cup brown sugar
  • 3 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce
  • 1/2 tbsp Dijon mustard
  • 1 tsp sweet smoked paprika
  • 1/2 tsp salt

Instructions

  1. Make the Marinade: Combine all the marinade ingredients in a large, shallow dish and whisk until smooth to create a flavorful barbecue glaze.
  2. Marinate the Chicken: Add the chicken thighs to the marinade and toss well to coat all pieces evenly. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.
  3. Prepare the Grill: Preheat your grill for direct heat, with an area of indirect heat on one side to control cooking and prevent burning.
  4. Grill the Chicken: Remove chicken from the marinade and place on the hot side of the grill. Cook for approximately 7-8 minutes per side, turning occasionally, until browned and caramelized. Maintain an internal temperature of 165°F (74°C).
  5. Manage Heat and Rest: If the marinade begins to burn, move the chicken to the cooler side of the grill. Once cooked, transfer the chicken to a plate and let rest for a few minutes before serving to retain juiciness.

Notes

  • This marinade also works well with chicken breasts, which may require about 5 extra minutes of cooking.
  • Leftover grilled chicken can be stored in an airtight container in the refrigerator for up to 3 days.
  • For extra smoky flavor, consider adding wood chips to your grill.
