Description

A delicious recipe for Grilled Chicken Salad with a flavorful Blueberry Balsamic Vinaigrette dressing. This salad is a perfect combination of tender grilled chicken, mixed greens, fresh berries, creamy goat cheese, and crunchy pecans.

Ingredients

Units Scale

For Blueberry Balsamic Dressing/Marinade:

  • 1/2 cup blueberries
  • 1/2 cup balsamic vinegar
  • 1 Tablespoon maple syrup (or honey)
  • 1 Tablespoon Dijon mustard
  • 1/2 cup olive oil
  • Salt and pepper, to taste

For Salad:

  • 1 pound chicken breasts, pounded or sliced horizontally to about 1/4 to 1/2 inch thick
  • Mixed salad greens (about 1 1/2-2 bags, or 8-12 oz. total)
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 4 ounces goat cheese
  • 4 Tablespoons chopped pecans, lightly toasted if desired

Instructions

  1. Prepare the Dressing: Combine the dressing ingredients in a blender or food processor until emulsified.
  2. Marinate the Chicken: Marinate the chicken in a portion of the dressing for at least 20 minutes.
  3. Grill the Chicken: Grill the chicken for 3-5 minutes per side until fully cooked. Brush with extra dressing while cooking.
  4. Rest and Slice: Let the chicken rest for 5 minutes before slicing.
  5. Assemble the Salad: Divide salad ingredients among plates or in a bowl. Top with sliced chicken and additional dressing.

Notes

  • You can customize the salad by adding other seasonal fruits or nuts.
  • Adjust the sweetness of the dressing by varying the amount of maple syrup or honey.
