Instructions

  1. Prepare the pineapple: Slice off the top and bottom of the pineapple to create flat surfaces. Stand it on one of the sliced ends and carefully peel off the skin, making eight sections around the fruit. Remove any remaining thorny bits and cut the pineapple into eight long chunks, trimming the hard core if necessary.
  2. Skewer the pieces: Thread each pineapple chunk lengthwise onto bamboo skewers, creating eight pineapple lollipops. Place the skewered pieces in a large bowl.
  3. Make the glaze: Combine the maple syrup, ground cinnamon, and salt in a small bowl. Mix well.
  4. Coat the pineapple: Drizzle the cinnamon-maple mixture over the pineapple skewers, rubbing gently to coat each piece thoroughly.
  5. Grill the pineapple: Heat a chargrill pan or grill plate over high heat. Place a few skewers at a time on the hot grill and cook for 3-4 minutes per side until golden and grill marks appear. Repeat with remaining skewers, being careful not to overcrowd the pan.
