Description

This Hearty Beef Barley Soup is a comforting and flavorful dish that is perfect for a cozy meal. Made with tender beef, hearty barley, and fragrant vegetables, this soup is easy to prepare and sure to satisfy your hunger.

Ingredients

Units Scale

Beef:

  • 1 1/2 lb. boneless chuck roast, cut into small cubes

Soup:

  • 3 tbsp. olive oil
  • 4 medium carrots, peeled and diced
  • 1 large onion, peeled and diced
  • 3 medium garlic cloves, minced
  • 1 cup pearl barley (or hulled barley)
  • 2 tbsp tomato paste
  • 8 cups beef or chicken broth
  • 1 tsp dried thyme
  • 1 tsp sea salt, or to taste
  • 1/3 tsp black pepper, or to taste

Instructions

  1. Cook the Beef: Heat a Dutch oven pot on high heat. Add olive oil and beef. Cook until liquids evaporate and beef browns, about 10 minutes.
  2. Add Vegetables: Reduce heat to medium. Add onion, carrots, and garlic. Cook for about 5 minutes.
  3. Season and Simmer: Stir in tomato paste, thyme, salt, and pepper. Add barley and broth. Simmer on medium-low heat for about 1 ½ hours until beef is tender.

Notes

  • Be patient with cooking the beef for the best tenderness.
  • Consider using homemade beef stock for enhanced flavor.
  • Choose between hulled barley for health benefits or pearl barley for a softer texture.
  • Enhance with red wine, mushrooms, and various herbs for added depth of flavor.
  • Experiment with bay leaves and Worcestershire sauce for extra taste.
