Instructions
- Cook the Beef: Heat a Dutch oven pot on high heat. Add olive oil and beef. Cook until liquids evaporate and beef browns, about 10 minutes.
- Add Vegetables: Reduce heat to medium. Add onion, carrots, and garlic. Cook for about 5 minutes.
- Season and Simmer: Stir in tomato paste, thyme, salt, and pepper. Add barley and broth. Simmer on medium-low heat for about 1 ½ hours until beef is tender.
