Celebrate the spooky season with these fun and festive Jack o Lantern Quesadillas. Using flour tortillas and melted colby jack cheese, these quesadillas are cut and carved to resemble pumpkins with charming faces, making them a perfect appetizer or snack for Halloween gatherings.

  • 10 – 8 inch flour tortillas
  • 2 cups shredded colby jack cheese
  • 4 inch pumpkin cookie cutter (or knife/kitchen scissors for cutting)


Instructions

  1. Cut Pumpkin Shapes: Use a 4 inch pumpkin cookie cutter to cut 2 pumpkin shapes from each tortilla. Alternatively, use a sharp knife or kitchen scissors to cut them out by hand. Set these pumpkin-shaped tortillas aside.
  2. Carve Faces: Using a sharp knife and cutting board, carve faces into half of the pumpkin-shaped tortillas to create the classic Jack o Lantern look.
  3. Assemble Quesadilla: Heat a large skillet over medium heat. Place one uncarved pumpkin-shaped tortilla in the skillet, then sprinkle shredded colby jack cheese evenly over it.
  4. Add Pumpkin Face Layer: Place one carved pumpkin face tortilla face down on top of the cheese in the skillet. Make sure the pumpkin stems on the two tortillas are facing opposite directions for the best presentation.
  5. Cook and Flip: Let the cheese begin to melt and then carefully flip the entire layered quesadilla so the carved pumpkin face is on top. Cook until the cheese is fully melted and the tortillas are golden brown and crispy.
  6. Repeat & Serve: Repeat the process with the remaining tortillas and cheese. Serve immediately with your favorite quesadilla dipping sauce or salsa for a festive treat.
