Description

These Lasagna Roll-Ups are a fun twist on classic lasagna, with individual servings that are easy to serve and enjoy. They are filled with a flavorful mixture of Italian sausage, cheeses, and spinach, all rolled up in lasagna noodles and baked to perfection.

For the Lasagna Roll-Ups:

  • 24 ounces marinara sauce, divided (3 cups)
  • 12 lasagna noodles
  • 1 pound Italian sausage
  • 2 large eggs, lightly beaten
  • 15 ounces ricotta cheese
  • 2 cups shredded mozzarella, divided
  • 1 1/2 cups fresh grated Parmesan cheese
  • 1/2 cup fresh basil leaves, chopped
  • 1 teaspoon ground pepper
  • 2 cups fresh spinach leaves, chopped
  • Fresh parsley, for garnish

Instructions

  1. Prep the Ingredients: Preheat oven to 375℉ and boil a large pot of water. Lightly coat a 13×9-inch casserole dish with vegetable cooking spray and spread 1 cup of marinara sauce on the bottom.
  2. Cook the Noodles and Sausage: Cook noodles al dente, then cook and crumble the Italian sausage with marinara sauce.
  3. Prepare the Filling: Mix eggs, ricotta, 1 cup mozzarella, Parmesan, basil, pepper, and spinach in a bowl.
  4. Assemble the Roll-Ups: Spread cheese mixture on noodles, add sausage, roll up, and place in the casserole dish.
  5. Bake: Cover with foil and bake for 30 minutes, then top with mozzarella and bake uncovered for 10-15 minutes more.
  6. Serve: Let it rest for 5-10 minutes before serving. Garnish with parsley or basil.

Notes

  • To make ahead, refrigerate up to 2 days before baking. Allow to come to room temperature before baking.
  • To freeze, tightly cover in plastic wrap and foil. Thaw overnight before baking.
  • Optional variations include using different meats, sautéed onions, frozen spinach, red pepper flakes, or omitting sausage or spinach.
