For the Lasagna Roll-Ups:
- 24 ounces marinara sauce, divided (3 cups)
- 12 lasagna noodles
- 1 pound Italian sausage
- 2 large eggs, lightly beaten
- 15 ounces ricotta cheese
- 2 cups shredded mozzarella, divided
- 1 1/2 cups fresh grated Parmesan cheese
- 1/2 cup fresh basil leaves, chopped
- 1 teaspoon ground pepper
- 2 cups fresh spinach leaves, chopped
- Fresh parsley, for garnish
Instructions
- Prep the Ingredients: Preheat oven to 375℉ and boil a large pot of water. Lightly coat a 13×9-inch casserole dish with vegetable cooking spray and spread 1 cup of marinara sauce on the bottom.
- Cook the Noodles and Sausage: Cook noodles al dente, then cook and crumble the Italian sausage with marinara sauce.
- Prepare the Filling: Mix eggs, ricotta, 1 cup mozzarella, Parmesan, basil, pepper, and spinach in a bowl.
- Assemble the Roll-Ups: Spread cheese mixture on noodles, add sausage, roll up, and place in the casserole dish.
- Bake: Cover with foil and bake for 30 minutes, then top with mozzarella and bake uncovered for 10-15 minutes more.
- Serve: Let it rest for 5-10 minutes before serving. Garnish with parsley or basil.
Notes
- To make ahead, refrigerate up to 2 days before baking. Allow to come to room temperature before baking.
- To freeze, tightly cover in plastic wrap and foil. Thaw overnight before baking.
- Optional variations include using different meats, sautéed onions, frozen spinach, red pepper flakes, or omitting sausage or spinach.
