Description

This hearty Lasagna Soup is a comforting twist on the classic dish, packed with all the flavors of traditional lasagna in a cozy, soup form. It’s perfect for a family dinner or a gathering with friends.

For the Soup:

  • 2 Tbsp olive oil, divided
  • 1 lb lean ground beef
  • 1 large yellow onion, diced (1 3/4 cups)
  • 5 garlic cloves, minced
  • 4 1/2 cups low-sodium chicken broth, plus more to thin as desired
  • 1 (14.5 oz) can petite diced tomatoes
  • 1 (14.5 oz) can crushed tomatoes
  • 2 1/2 Tbsp tomato paste
  • 1 3/4 tsp dried basil
  • 3/4 tsp dried oregano
  • 1/2 tsp dried rosemary, crushed
  • 1/2 tsp dried thyme
  • Salt and freshly ground black pepper, to taste
  • 8 lasagna noodles, broken into bite-size pieces
  • 1 1/4 cups shredded mozzarella cheese
  • 1/2 cup finely shredded parmesan cheese
  • 8 oz ricotta cheese
  • 2 Tbsp chopped fresh parsley, plus more for garnish

Instructions

  1. Prepare the Soup: Heat 1 tablespoon of olive oil in a large pot over medium-high heat. Brown the ground beef, season with salt and pepper, then set aside.
  2. Saute Onion and Garlic: Add the remaining olive oil to the pot, saute the onion until soft, then add garlic and cook for another 30 seconds.
  3. Cook the Soup: Add chicken broth, diced tomatoes, crushed tomatoes, tomato paste, herbs, and the cooked beef. Simmer for 20 minutes.
  4. Prepare Cheese Mixture: Combine mozzarella, parmesan, and ricotta in a bowl.
  5. Finish the Soup: Cook the lasagna noodles separately, then stir them into the soup along with the cheese mixture and parsley. Adjust consistency with more broth if needed.
  6. Serve: Ladle the soup into bowls, top with cheese mixture, and garnish with parsley.

Notes

  • If you prefer less garlic, reduce the cloves used.
  • If you lack specific herbs, Italian seasoning can be used as a substitute.
  • Campanelle or bowtie pasta can be used as alternatives to lasagna noodles.
  • Add extra broth if preparing leftovers or simmer noodles with the soup for 12 minutes if serving immediately.
  • Consider adding diced carrots for extra veggies.
  • Optional: Omit sugar and fennel seeds for a simpler ingredient list.
