  • 3 Italian sausage links, casings removed

  • 1 tbsp tomato paste
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup half and half
  • 1 lb shelf-stable potato gnocchi
  • 2 cups spinach
  • 1/4 cup parmesan cheese
  • 6 basil leaves, chopped

Instructions

  1. Brown the Sausage: Heat the oil in a large skillet over medium heat. Add the sausage, crumbling it with a wooden spoon, and cook until browned, about 4-5 minutes.
  2. Sauté Aromatics: Add the minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes to the skillet and sauté for 1 minute until fragrant.
  3. Toast Tomato Paste: Stir in the tomato paste and toast it while stirring continuously for 1 minute to deepen its flavor.
  4. Simmer Sauce: Add the chopped sun-dried tomatoes, chicken broth, and half and half. Bring the mixture to a simmer, scraping up any browned bits stuck to the bottom of the pan.
  5. Cook Gnocchi: Submerge the gnocchi as much as possible in the sauce. Cover the pan and cook for 3-4 minutes, stirring once or twice, until the gnocchi is tender and cooked through.
  6. Add Greens and Cheese: Stir in the spinach, parmesan cheese, and chopped basil. Cook just until the spinach has wilted, then remove from heat.

Notes

  • For a spicier dish, increase the amount of red pepper flakes.
  • Use sun-dried tomato oil for a richer, more intense flavor.
  • Fresh gnocchi may require less cooking time; adjust accordingly.
