These Mini Air Fryer Tacos are a delicious and easy-to-make snack or meal. Crispy corn tortillas filled with refried beans, melted cheese, and a touch of hot sauce, served with a creamy salsa dip.

For the Mini Bean and Cheese Tacos
- 6 street taco size corn tortillas
- 6 tablespoons refried black beans, or regular refried beans
- Hot sauce, to taste (Cholula Chipotle recommended)
- 6 tablespoons shredded sharp cheddar cheese
- Nonstick cooking spray or avocado oil mister
For the Creamy Salsa Dip
- 1/2 cup light sour cream
- 1/3 cup chunky salsa
- 1 to 2 tablespoons chopped cilantro leaves
Instructions
- Prepare Air Fryer and Tortillas: Line the air fryer basket with parchment paper. Warm tortillas in the microwave until pliable.
- Assemble Tacos: Spread beans, hot sauce, and cheese on one side of each tortilla. Fold in half.
- Cook Tacos: Coat tacos with oil, air fry at 400°F for 6 minutes, flip and cook another 2-3 minutes.
- Make Dipping Sauce: Mix sour cream, salsa, and cilantro.
- Serve: Rest tacos, serve with dipping sauce.
- Enjoy: Double or triple the recipe for a larger group; keep warm in the oven.
