- Cut the tortillas: Using a 2½-inch circle cookie cutter or a glass with a 3½-inch circumference and a small knife, cut 3 circles from each tortilla for a total of 12 circles.
- Prepare the hummus mixture: In a small bowl, stir together the hummus, ground cumin, and minced cilantro until well combined.
- Assemble the quesadillas: Spread about 1 teaspoon of the hummus mixture on each tortilla circle. Evenly divide the avocado slices and crumbled queso fresco, arranging them over one half of each tortilla circle.
- Cook the quesadillas: Heat a large skillet over medium heat. Place several quesadillas in the pan and cook until the tortillas turn golden brown and crispy, about 2 to 3 minutes per side.
- Serve: Repeat the cooking process with the remaining quesadillas. Serve warm as a healthy snack or appetizer.
