Chicken Pasta:

  • 1 lb. boneless, skinless chicken breast, cut into 1-inch pieces
  • 2 Tbsp butter
  • 2 cloves garlic, minced
  • 1/2 lb. penne pasta
  • 1.5 cups chicken broth
  • 1 cup milk
  • 3 oz. cream cheese, cut into chunks
  • 1/3 cup basil pesto
  • 1/4 cup grated Parmesan
  • freshly cracked pepper, to taste
  • 1 pinch crushed red pepper

Optional Add-Ins:

  • 3 cups fresh spinach
  • 1/4 cup sliced sun dried tomatoes

Instructions

  1. Cook Chicken: In a deep skillet, melt butter over medium heat. Add chicken and cook until slightly browned.
  2. Prepare Pasta: Add minced garlic to the skillet and sauté for one minute. Add uncooked pasta and chicken broth. Bring to a boil, then simmer for about 8 minutes.
  3. Make Sauce: Add milk, cream cheese, and pesto. Cook until cheese melts. Stir in Parmesan.
