Chicken Pasta:
- 1 lb. boneless, skinless chicken breast, cut into 1-inch pieces
- 2 Tbsp butter
- 2 cloves garlic, minced
- 1/2 lb. penne pasta
- 1.5 cups chicken broth
- 1 cup milk
- 3 oz. cream cheese, cut into chunks
- 1/3 cup basil pesto
- 1/4 cup grated Parmesan
- freshly cracked pepper, to taste
- 1 pinch crushed red pepper
Optional Add-Ins:
- 3 cups fresh spinach
- 1/4 cup sliced sun dried tomatoes
Instructions
- Cook Chicken: In a deep skillet, melt butter over medium heat. Add chicken and cook until slightly browned.
- Prepare Pasta: Add minced garlic to the skillet and sauté for one minute. Add uncooked pasta and chicken broth. Bring to a boil, then simmer for about 8 minutes.
- Make Sauce: Add milk, cream cheese, and pesto. Cook until cheese melts. Stir in Parmesan.
- Finish Dish: Add spinach and sun dried tomatoes if desired. Serve topped with peppers.
