Italian Sausage:
1 lb Italian sausage (medium spice)
Yellow Onion:
1 large yellow onion (diced)
Garlic Cloves:
3 cloves
Water:
3 quarts
Beef Better Than Bouillon:
2 tbsp
Potatoes:
3 large potatoes
Heavy Whipping Cream:
1 cup
Fresh Kale:
1/2 bunch
Instructions
- Preheat Pot: Heat a pot on medium-high. Add and cook sausage, breaking into pieces.
- Add Onion & Garlic: Dice onion, add to pot with sausage. Press in garlic. Cook until onions are tender.
- Add Water & Bouillon: Carefully add water and beef bouillon to pot. Simmer for 30 minutes.
- Prepare Potatoes & Kale: Peel and slice potatoes. Chop kale into pieces.
- Add Potatoes: Simmer until tender. Stir in cream, bring to a boil. Add chopped kale. Cover and let sit off the heat.
- Serve: Garnish with Parmesan cheese and bacon bits.
