Description

A fresh and flavorful peach bruschetta recipe topped with creamy goat cheese and a drizzle of honey, perfect for a quick appetizer or light snack with vibrant fruit flavors and aromatic basil.

Ingredients

Units Scale

For the Toasts

  • 1 large baguette, about 24 slices, 2/3 inch thick

For the Peach Topping

  • 4 peaches, halved, pits removed
  • 1/3 cup red onion, finely chopped
  • 1 clove garlic, minced
  • 1/2 cup fresh basil, thinly sliced or julienned

For Assembly

  • 4 ounces plain chevre goat cheese
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon honey

Instructions

  1. Broil the baguette slices: Preheat your oven’s broiler. Arrange the baguette slices on a sheet pan. Broil on high heat for 3 to 4 minutes until they turn lightly brown. Keep a close eye to prevent burning. Remove from oven and let cool.
  2. Prepare the peach topping: Chop the peaches into bite-sized pieces about 1/4 inch. In a large mixing bowl, combine the chopped peaches, chopped red onion, minced garlic, and sliced basil. Toss gently to combine.
  3. Assemble the bruschetta: Spread about 1 teaspoon of goat cheese on each toasted baguette slice. Top each with approximately 1 tablespoon of the peach mixture.
  4. Finish and serve: Drizzle each toast with a little olive oil and honey. Serve immediately at room temperature for the best flavor and texture.

Notes

  • Adjust the amount of honey for desired sweetness.
  • Use ripe peaches for the sweetest flavor.
  • Can be served slightly warm or at room temperature.
  • For a vegan version, substitute goat cheese with a dairy-free cheese alternative.
