For the Toasts
- 1 large baguette, about 24 slices, 2/3 inch thick
For the Peach Topping
- 4 peaches, halved, pits removed
- 1/3 cup red onion, finely chopped
- 1 clove garlic, minced
- 1/2 cup fresh basil, thinly sliced or julienned

- 4 ounces plain chevre goat cheese
- 1 tablespoon extra virgin olive oil
- 1 teaspoon honey
Instructions
- Broil the baguette slices: Preheat your oven’s broiler. Arrange the baguette slices on a sheet pan. Broil on high heat for 3 to 4 minutes until they turn lightly brown. Keep a close eye to prevent burning. Remove from oven and let cool.
- Prepare the peach topping: Chop the peaches into bite-sized pieces about 1/4 inch. In a large mixing bowl, combine the chopped peaches, chopped red onion, minced garlic, and sliced basil. Toss gently to combine.
- Assemble the bruschetta: Spread about 1 teaspoon of goat cheese on each toasted baguette slice. Top each with approximately 1 tablespoon of the peach mixture.
- Finish and serve: Drizzle each toast with a little olive oil and honey. Serve immediately at room temperature for the best flavor and texture.
