Queso Fundido:
- 1 Tablespoon vegetable oil
- 5 ounces Mexican Chorizo casings removed
- 12 ounces Monterey or Oaxaca Cheese grated (2 1/2 cups)
Serving Suggestions:
- 6 Flour tortillas or
- 12 ounces tortilla chips for serving
- 1 1/2 cup of Roasted Salsa
Instructions
- Preheat oven to 350 degrees. Place a skillet over medium heat, add the oil if using. Add the chorizo and cook for 6-7 minutes, stirring frequently. Remove excess fat.
- Place cooked chorizo in an oven-proof dish. Top with grated cheese. Bake for 10-12 minutes until melted and bubbling.
- Remove from oven and serve. Garnish with reserved chorizo. Serve warm with salsa and tortillas or chips.
Notes
- You can use Spanish chorizo if Mexican Chorizo is not available.
- Queso Fundido can be made over the stove, grill, or microwave. Stir frequently.
