- 1 cup creamy peanut butter (or nut butter of choice)
Chocolate Coating
- 20 oz. Ghirardelli white chocolate melting wafers
- 1-2 Tbsp coconut oil (optional)

- 1/4 cup festive holiday sprinkles
- Flaky sea salt, for finishing
Instructions
- Prepare your work surface: Line a cookie sheet with parchment paper and lay out 1 sleeve of Ritz crackers with the flat side facing up to create the base for each sandwich cookie.
- Spread peanut butter: Using about 2 teaspoons per cracker, evenly spread a thick layer of creamy peanut butter on the flat side of each cracker. Eyeball the amount to ensure a generous and tasty filling.
- Make sandwich cookies: Place another Ritz cracker on top of each peanut butter-spread cracker, rounded side up, to form sandwich cookies. You should have about 30 cookie sandwiches total.
- Melt the chocolate: Place the white chocolate melting wafers in a microwave-safe bowl. Heat on high for 1 minute, then stir. Heat for another minute and stir again until melted and smooth. Optionally, stir in 1 to 2 tablespoons of coconut oil to facilitate smoother melting and easier dipping.
- Dip the cookies: Using a fork, carefully dunk each sandwich cookie fully into the melted white chocolate, coating it completely. Gently tap the fork on the side of the bowl to remove excess chocolate, then place the coated cookie back onto the parchment paper.
- Decorate: Drizzle any remaining melted white chocolate over the cookies for an artistic touch. Immediately sprinkle festive holiday sprinkles and a pinch of flaky sea salt on top of each coated cookie for flavor and holiday flair.
