Vegetable Base:
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 small white onion, roughly chopped
- 3 carrots, roughly chopped
- 2 stalks celery, roughly chopped
- 3 cloves garlic, minced
Seasonings and Liquids:
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 32oz jar roasted red peppers, drained and rinsed
- 4 sundried tomatoes
- 4 cups vegetable stock
- 1 cup heavy cream
- 1 cup freshly shredded smoked gouda cheese
- Salt and pepper, to taste
Instructions
- Prepare the vegetables: Dice the onion, roughly chop the carrots and celery, and mince the garlic.
- Sauté the vegetables: In a large pot over medium heat, sauté onion until translucent. Add carrots, celery, garlic, paprika, and Italian seasoning; sauté for a few more minutes.
- Cook the soup: Add drained red peppers, sundried tomatoes, and vegetable stock to the pot. Simmer for 15-20 minutes until vegetables are soft.
- Blend the soup: Remove from heat and blend until smooth using an immersion blender.
- Finish the soup: Stir in cream and gouda cheese until melted. Season with salt and pepper.
