Shrimp:
- 1 cup cooked medium-sized shrimp, cut into small pieces
Sushi Rice:
- 1/2 cup cooked brown rice
- 1 tbsp. melted butter
- 1 tbsp. olive oil
- 1 tsp. rice wine vinegar
Additional Ingredients:
- 1/2 cup cucumbers, diced
- 2 tsp. Wasabi mayo
- 3 tsp. Sriracha sauce
- 1/2 avocado, diced
- 1 tsp. sesame oil
- 2 Wasabi Seaweed snack sheets or nori sheets
Instructions
- Melt butter and olive oil in a pan over low heat, then add shrimp. Slowly cook the shrimp in the butter for about 8 minutes, seasoning with salt and pepper.
- Remove shrimp from the pan, keeping the butter sauce.
- Combine the vinegar and reserved butter sauce with the cooked rice, stirring well.
- In a separate bowl, mix sesame oil, Wasabi mayo, Sriracha sauce, salt, and pepper.
- Assembly: Using a 1-cup measuring cup, layer shrimp, cucumbers, avocado, and rice, finishing with a garnish of seaweed.
