Strawberry Ice Cream Layer:

  • 4 cups strawberry ice cream
  • 1/2 cup freeze-dried strawberries

Topping:

  • 10 golden sandwich cookies
  • 1 cup freeze-dried strawberries

Instructions

  1. Line the Pan: Line an 8”-x-8” baking pan with parchment paper, leaving overhang on sides.
  2. Prepare Crust: Process 20 cookies and salt, add melted butter, press into pan, and freeze.
  3. Add Vanilla Layer: Mix and spread 4 cups vanilla ice cream over crust. Freeze.
  4. Add Strawberry Layer: Mix strawberry ice cream with freeze-dried strawberries, spread over vanilla layer. Freeze.
  5. Make Topping: Pulse 10 cookies and 1 cup strawberries, sprinkle over cake.
  6. Final Layer: Mix 1 1/2 cups vanilla ice cream, spread over cake. Freeze.
  7. Chill and Serve: Freeze for at least 4 hours, cut into squares or rectangles, and serve.
