Description

Delicious and easy-to-make Thai Peanut Noodles with a perfect balance of flavors. This dish is a wonderful combination of creamy peanut sauce, fresh herbs, and a hint of spice.

Main Ingredients:

  • 8 ounces linguine noodles or Asian style noodle of choice
  • 1/2 cup chicken or vegetable broth
  • 3 cloves garlic pressed or minced
  • 3 tablespoons soy sauce
  • 3 tablespoons peanut butter creamy
  • 1 1/2 tablespoons honey

Garnishes and Optional:

  • 1 1/2 tablespoons finely minced fresh ginger or a heaping 1/4 teaspoon dry ginger in a pinch
  • 12 teaspoons Sriracha chili sauce plus more for serving if desired
  • 1 bunch green onions chopped
  • 1/2 cup cilantro chopped
  • 2 limes cut into quarters
  • 1/4 cup peanuts chopped
  • chili crisp oil as desired, for serving
  • 810 ounces Shrimp or grilled, sliced chicken or steak

Instructions

  1. Cook Noodles: If using uncooked noodles, boil them in salted water. If using pre-cooked noodles, skip this step.
  2. Prepare Sauce: In a saucepan, combine broth, ginger, garlic, soy sauce, peanut butter, honey, and Sriracha. Cook until well combined and slightly thickened.
  3. Toss Noodles: Drain cooked noodles and toss in the peanut sauce. Serve in bowls and top with green onions, cilantro, and peanuts.
  4. Serve: Squeeze lime juice over each serving and garnish with additional lime wedges, Sriracha, or chili oil if desired. Enjoy!

Notes

  • A little note about Sriracha levels: adjust according to personal preference for spice.
  • Store leftovers in an airtight container in the fridge and consume within 3-4 days.
  • Sautéing garlic and ginger before making the sauce enhances the flavors.
