- 1 ½ cups cottage cheese
- ½ cup shaved parmesan
- ½ cup shredded mozzarella cheese
- 1 cup spinach, chopped
Garnish (optional)
- ½ cup cottage cheese
- 2 tbsp chopped basil
Instructions
- Sauté Aromatics: In a large sauce pot or Dutch oven over medium heat, warm the olive oil until fragrant. Add the diced onion and minced garlic, sautéing for 3-4 minutes until softened and aromatic.
- Cook Ground Beef: Add the lean ground beef to the pot with the onions and garlic. Stir to combine and cook for 4-6 minutes until the beef is browned and cooked through.
- Add Seasonings and Tomato Paste: Sprinkle in the Italian seasoning, salt, pepper, and tomato paste. Mix thoroughly to evenly coat the beef and allow the flavors to meld while continuing to cook briefly.
- Combine Liquids and Tomatoes: Pour in the beef broth, marinara sauce, diced tomatoes (with their juices), and water. Stir well to incorporate everything evenly.
- Add Pasta: Break the lasagna noodles into halves and add them to the soup, ensuring they are fully submerged in the liquid. Cover the pot with a lid.
- Simmer Soup: Bring the soup to a boil, then reduce heat and let it simmer for 12-15 minutes. Cooking time may vary depending on the type of lasagna noodles used; noodles should be tender when done.
