Description

This TikTok Lasagna Soup is a comforting and hearty twist on traditional lasagna, served as a warm soup. Combining ground beef, Italian seasonings, marinara, and broken lasagna noodles with a creamy blend of cottage cheese, parmesan, and mozzarella, it’s an easy-to-make one-pot meal perfect for any occasion.

Ingredients

Scale

Sauce Base & Meat

  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3-4 cloves garlic, minced
  • 1 lb lean ground beef
  • 1.5 tbsp Italian seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 tbsp tomato paste

Liquids & Pasta

  • 4 cups beef broth
  • 1 jar marinara sauce, Rao’s (24 oz)
  • 1 can diced tomatoes (juices included), 14.5 oz
  • ¼ cup water
  • 10 oz lasagna noodles, broken in half

Cheeses & Greens

  • 1 ½ cups cottage cheese
  • ½ cup shaved parmesan
  • ½ cup shredded mozzarella cheese
  • 1 cup spinach, chopped

Garnish (optional)

  • ½ cup cottage cheese
  • 2 tbsp chopped basil

Instructions

  1. Sauté Aromatics: In a large sauce pot or Dutch oven over medium heat, warm the olive oil until fragrant. Add the diced onion and minced garlic, sautéing for 3-4 minutes until softened and aromatic.
  2. Cook Ground Beef: Add the lean ground beef to the pot with the onions and garlic. Stir to combine and cook for 4-6 minutes until the beef is browned and cooked through.
  3. Add Seasonings and Tomato Paste: Sprinkle in the Italian seasoning, salt, pepper, and tomato paste. Mix thoroughly to evenly coat the beef and allow the flavors to meld while continuing to cook briefly.
  4. Combine Liquids and Tomatoes: Pour in the beef broth, marinara sauce, diced tomatoes (with their juices), and water. Stir well to incorporate everything evenly.
  5. Add Pasta: Break the lasagna noodles into halves and add them to the soup, ensuring they are fully submerged in the liquid. Cover the pot with a lid.
  6. Simmer Soup: Bring the soup to a boil, then reduce heat and let it simmer for 12-15 minutes. Cooking time may vary depending on the type of lasagna noodles used; noodles should be tender when done.
  7. Finish with Cheese and Spinach: Stir in the cottage cheese, shaved parmesan, shredded mozzarella, and chopped spinach. Allow the spinach to wilt and the cheeses to melt gently for a few minutes.
  8. Serve and Garnish: Ladle the soup into bowls and top with an additional dollop of cottage cheese and fresh chopped basil if desired. Serve warm and enjoy!

Notes

  • Use broken lasagna noodles for easier cooking and eating in soup form.
  • Adjust salt and pepper to taste depending on the saltiness of your broth and marinara.
  • Spinach can be substituted with kale or other leafy greens.
  • For a vegetarian version, omit ground beef and use vegetable broth and plant-based cheese alternatives.
  • Leftovers can be stored in the fridge for up to 3 days and reheat well on stovetop or microwave.
