These delightful Coconut Snowman Truffles are a fun and festive treat perfect for winter celebrations. Coconut Snowmen Truffles
- 320g (11.25 oz) dairy-free sweetened condensed milk, 1 regular can
- 4 cups (320g) fine shredded coconut / desiccated coconut, plus extra for rolling
To Decorate
- 3 tablespoons vegan white chocolate, or white candy melts, melted and as needed
- 3 tablespoons black-colored icing, or as needed
- 2 tablespoons orange-colored icing, or as needed
- 24 thin pretzel sticks, 2 inches (5 cm) each
- 12 red candy straps, 5 inches (13 cm) each
Instructions
- Combine Ingredients: Add the shredded coconut and dairy-free sweetened condensed milk to a large mixing bowl. Mix thoroughly with a wooden spoon or hand mixer until the mixture is well combined and sticky.
- Shape Snowmen: Divide the mixture into roughly 12 larger balls and 12 smaller balls, which will form the bodies and heads of the snowmen. Roll each ball firmly in extra shredded coconut to coat.
- Assemble Snowmen: Pair each larger ball with a smaller one by dabbing melted vegan white chocolate onto the larger ball and placing the smaller ball on top. Allow the assembled snowmen to firm up at room temperature or refrigerate.
- Decorate Snowmen: Using piping bags or toothpicks, carefully draw eyes and buttons with black-colored icing, and noses with orange-colored icing. Insert pretzel sticks into the sides to create arms, and wrap red candy straps around the necks as scarves. Use extra melted white chocolate to secure decorations if needed.
- Storage: Store the finished snowman truffles in an airtight container at room temperature for up to 1 day, in the refrigerator for up to 1 week, or freeze for up to 1 month. Note that pretzel sticks may soften over time.
Notes
- The number of snowmen made depends on the size you roll your coconut truffles.
- If sweetened condensed milk is unavailable, substitute with 1 cup (240g) thick scoopable coconut cream and 1/4 cup (85g) maple syrup, but expect a less sticky mixture and adjust coconut or syrup as needed.
- Since the decorating icings may not fully adhere to the coconut-coated surface, gently pressing or scraping the piping tip next to each dot can help improve adhesion; don’t stress about perfection.
