Ingredients
- 3 qty skinless chicken breast halves, boned
- 1/2 tbsp paprika
- 1/2 tbps Onion power
- 1/4 tbsp Cayenne pepper
- 1/4 tbsp White pepper or freshly ground black pepper
- 1/4 tbsp ground thyme
- 1/4 tbsp cumin
- 1/4 tbsp salt
- 4 tbsp Pecan or 2tbsp pecan halves
- 1 qty egg white
- 2 tbsp canola oil
Instructions
- Slice the chicken breasts length wise into long strips about 1/2-inch wide. (Or buy chicken tenders, which are available in most grocery stores, and slice each in half lengthwise.) Set aside.
- Beat the egg white lightly ina wide shallow dish. In another dish, thoroughly mix the spices and seasoningsand pecan meal. (If using pecan halves, grind nuts until they are theconsistency of coffee grounds.)
- Dip each chicken strip in theegg white, then roll lightly in the pecan-spice mixture. Set aside on a sheetof wax paper. If not cooking immediately, refrigerate uncovered.
- Heat the canola oil in alarge, shallow non-stick skillet over medium-high heat. Cook the chicken stripswithout crowding, turning occasionally.
- Cook until the chicken isopaque, firm to the touch, and the pecan meal is golden brown. Drain lightly onpaper towels.
